Chemex

Chemex is a type of pour-over coffee. The coffee is light and smooth with a well-defined body.

Ingredients

  • 40 g. coarsely ground coffee beans
  • 600 ml. water

Steps

  1. Pour water into a kettle and bring to a boil.
  2. Grind the coffee beans coarsely using a burr grinder.
  3. Place the Chemex filter in the Chemex carafe, with the three-layered side facing the spout.
  4. Rinse the filter with hot water to remove any paper taste and to preheat the Chemex.
  5. Discard the rinse water.
  6. Pour the ground coffee into the filter.
  7. Start a timer and pour just enough water over the grounds to wet them and allow them to bloom for 30 seconds.
  8. Pour the remaining water in a circular motion, starting from the center and working your way outwards, trying to saturate all the grounds evenly.
