Café de Olla

Café de Olla is a traditional way to prepare coffee in Mexico. It is made using a traditional earthen clay pot which gives the coffee a unique flavor.

Ingredients

  • 1 cup ground coffee
  • 1 cinnamon stick
  • 4 cups water
  • 1/4 cup piloncillo or dark brown sugar

Steps

  1. In a pot, combine the water, coffee, cinnamon stick, and piloncillo.
  2. Bring the mixture to a boil over medium heat.
  3. Once boiling, reduce the heat to low and simmer for about 5 minutes.
  4. Remove the pot from the heat and let it sit for a few minutes to allow the grounds to settle.
  5. Strain the coffee into a cup through a fine-mesh sieve or coffee filter.
